Apple Carrot Mix (Print Version)

# Ingredients:

01 - 1 green granny smith apple
02 - 1 red apple, such as red delicious
03 - 1/4 cup yellow onion, minced finely
04 - 1 cup canned mandarin oranges, drained well
05 - 2 cups shredded carrots (look for pre-shredded options in stores)

→ Seasoning & Dressing

06 - 2 tablespoons fresh lemon juice
07 - 1 tablespoon granulated sugar
08 - 1/4 teaspoon black pepper
09 - 1/4 cup mayonnaise
10 - 1/4 teaspoon fine salt
11 - 1/2 cup vanilla-flavored yogurt

→ Extras

12 - 1/3 cup dried cranberries, sweetened

# Instructions:

01 - Chop both apples into thin matchstick slices. Toss the pieces with lemon juice in a small bowl to keep them fresh, and let it sit for 5 minutes.
02 - In a big bowl, combine the shredded carrots with the finely chopped onion and cranberries.
03 - Add the soaked apples to the mixing bowl. Toss in the yogurt, mayo, sugar, salt, and pepper, and mix everything together.
04 - Gently fold in the drained mandarins. Make sure the ingredients are well blended without breaking the orange segments.
05 - Cover the bowl tightly and keep it in the fridge for 3 hours or more before digging in.
