Turn oven to 350°F and get a baking sheet ready with parchment paper on it.

Cut the puff pastry into 16 little squares and set them spaced apart on the baking sheet.

Put a slice or two of apple and a chunk of brie in the middle of each square. Pull all the corners to the center and push gently to close.

Lightly coat the top of each assembled piece with the beaten egg.

Bake for about 15-20 minutes, until they puff up and look golden. Enjoy them while warm.
